- 1 pint strawberries, sliced
- 1 pint blueberries
- 1 mango, peeled and cubed
- 1 peach, peeled and cubed
- 1/8 cup simple syrup (see instructions below)
- 1/4 cup lime juice
- 1/2 cup fresh mint, chopped
- 1/8 teaspoon almond extract
How to Make this Fresh Fruit Salad?
- Make a simple syrup by combining 1 part water and 1 part sugar in a sauce pan. Bring the water to a boil, stirring in the sugar until it dissolves completely. Remove from heat and let it cool while you prep the fruit.
- Wash all the fruit. Peel and chop as necessary.
- In a blender, mix the simple syrup, the lime juice, the mint, and almond extract.
- Pour syrup over fruit and toss it all until thoroughly coated.
- Chill the salad before serving. Overnight is best, but an hour or two is sufficient.
